Meet Donna


Donna was born in December in Raymond, Alberta, Canada.  In her free time she likes to read, walk, hike, bike, learn, play with grandchildren and be with family.  If she could go anywhere in the world she would go to Alaska, Scotland, England, Italy, Australia, Africa, St. George, the Uintas (anywhere, as long as Mark was there)!

Ham and Cheese Mini Turnover

Ingredients:

1 c (3 oz) grated Gruyere, Swiss or Cheddar cheese
4 oz cooked ham, cut into 1/4 inch dice
1 box Pepperidge Farm frozen puff pastry thawed in refrigerator.  This has two sheets.
Dijon mustard or for milder flavor mix: 1/4 c mayo, 1 1/2 tsp yellow mustard, 1 1/2 tsp honey, 1 1/2 tsp milk, 1/8 tsp black pepper
1 large egg beaten

Directions:

Preheat oven to 400 degrees.  Spray 2 baking trays.  On a lightly floured surface roll out 1 pastry sheet to a 12 inch square.  Cut into 9 squares or 16 squares for minis.  Working with one square at a time, brush edges with egg.  Spread about 1 tsp mustard or sauce in center.  Top with ham and cheese.  Fold together opposite corners of square, forming a triangle, and press together edges to seal; decorate with tines of a fork.  Transfer to baking sheet, brush with egg and prick top of each once with a fork.  Repeat with remaining pastry sheet, filling and egg.

Bake 5 minutes.  Reduce heat to 375 degrees and bake until puffed and golden brown, about 10-15 minutes more. 

Chicken Pillows

Ingredients:

1 (8 oz) can Pillsbury Crescent Rolls
1/4 c butter, softened
1 egg
suggested spices to taste - garlic salt, salt, pepper, Italian seasonings
8 oz. cream cheese, softened
2-3 c cooked and shredded chicken
1 sleeve saltine crackers, crushed

Sauce Topping:

1 can cream of chicken soup
1/4 c milk
2 spoons full sour cream
1/2 c shredded cheese

Directions:

Preheat oven to 400 degrees
 Soften 1/4 c butter and 8 oz block of cream cheese.  Then stir to a smooth consistency.  Add chicken to the bowl. 

Lay out the 8 crescents on a cookie sheet.  Stretch the crescent out.

Place a couple spoonfuls of the creamy chicken mixture into the center of the crescent to fill it.  Then fold the crescent around the mixture so that none of it is showing.  I'll call this the "pillow".

In a separate smaller bowl, put the egg and a little bit of water, maybe a couple tablespoons worth and beat together.

Dip the "pillow" into the blended egg.  After dipping into the blended egg, proceed to dip it into the crushed saltine crackers and place on cookie sheet.  Repeat for the remaining 7 crescents. 

Cook the pillows at 400 degrees for 20 minutes.  Keep an eye on them, your oven might cook them quicker.

For the sauce topping put can of chicken soup and milk into a sauce pan.  Add as much milk as you want to get it to the consistency you want.  When hot enough add 2 spoonfuls of sour cream and cheese to your liking.

Caramel Bars


3/4 c. butter
3/4 c. brown sugar
1 c. flour
1 c. old-fashioned oats
1/2 tsp salt

Mix butter, brown sugar, flout, oats, soda and salt.  Press 3/4 of oat mixture into the bottom of a 9 x 13 pan.  Bake at 350 degrees for 15 minutes.

1 pkg Kraft caramels, unwrapped
3 Tbsp cream (or half and half)- I used milk
3 Tbsp butter
2 c. milk chocolate chips

While crust is baking, melt the caramels, cream and butter over low heat or in a double boiler.  Pour melted mixture over crust.  Sprinkle with chocolate chips and crumble remaining oat mixture on top.  Bake at 350 degrees for an additional 15 minutes.  Cool before slicing.

Meeker Colorado Dessert

Crust:

2 c. graham cracker crumbs
3 Tbsp. sugar
1/2 c. softened butter or margarine

Blend together and press into the bottom of a 9 x 13 pan.

Cream Filling:

2 c. powdered sugar
1 c. softened butter or margarine
2 eggs
1 Tbsp vanilla

Beat with electric mixer for exactly 15 minutes.  Pour over crust and set in refrigerator for 30 minutes.

Layers:

3 sliced bananas
1 lg can of crushed pineapple- drained
1 lg Cool Whip
optional - sprinkle nuts on top

Layer in order of the set cream.  Chill for at least an hour or overnight.

Lemon Cheesecake Mousse

Crust:

3/4 c. crushed graham crackers (6 full sheets)
2 Tbsp granulated sugar
3 Tbsp salted butter, melted

Mousse:

2 1/2 Tbsp fresh lemon juice
1 1/2 Tbsp water
1 1/2 tsp unflavored gelatin powder
1 1/2 c. heavy cream
1 c. powdered sugar, divided
yellow food coloring (optional)
12 oz. cream cheese, softened
1 (10 oz) jar lemon curd (I love Trader Joe's)
Sweetened whipped cream, lemon wedges, blueberries and mint for garnish (optional)

Directions:

In a mixing bowl whisk together graham cracker crumbs and sugar.  Pour in butter and stir until evenly moistened.  Divide mixture among 8-10 dessert cups and lightly press into an even layer, set aside.

Pour lemon juice and water into a small bowl.  Sprinkle gelatin evenly over top, let rest 5 minutes.  Meanwhile, whip heavy cream in a medium mixing bowl until soft peaks form.  Add in 1/3 cup of the powdered sugar, tint with yellow food coloring if desired and whip until stiff (but not lumpy) peaks form (shake cream from beaters, no need to clean).  In a separate mixing bowl whip cream cheese until smooth and fluffy.  Mix lemon curd and remaining 2/3 cup powdered sugar into cream cheese mixture. 

Heat rested gelatin mixture in the microwave on high power for 30 seconds.  Whisk for 1 minute to thoroughly dissolve gelatin, then let cool 3 minutes (not longer or it may start to set then you could end up with little lumps in the mousse).  While mixing cream cheese mixture with hand mixer, slowly pour in gelatin mixture then blend until thoroughly combined.  Gently fold 1/3 of the whipped cream mixture into the cream cheese mixture to lighten, then add remaining whipped cream and gently fold until combined.  Spoon or pipe mixture into dessert cups over graham cracker layer.  Cover and refrigerate 2 hours (or up to 1 day ahead if desired) to set.  Garnish as desired.  Serve cold.  Makes 8-10 servings.

Pumpkin Bread

Ingredients:

2/3 c. shortening
2 2/3 c. sugar
4 eggs
1 can pumpkin
2/3 c. water
3 1/3 c. flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
2/3 c. nuts

Directions:

Cream shortening and sugar.  Add eggs, pumpkin and water.  Sift flour, baking powder, soda, salt and spices.  Add to pumpkin mixture.  Add nuts.  Pour into 6 small greased and floured loaf pans.  Bake at 350 degrees for 1 hour.

Peanut Butter Cookies

Ingredients:

1 c. peanut butter
1 c. sugar
1 egg

Directions:

Mix together ingredients and cook at 350 degrees for 13 minutes

Taco Soup

Ingredients:

1 can creamed or regular corn
2 cans tomato sauce
1 can tomato soup
1 can kidney beans
1 pkg. mild taco seasoning
1 lb. ground beef (browned)

tortilla chips
shredded cheese
sliced olives
sour cream

Directions:

Heat ingredients together in saucepan until thoroughly cooked.  Serve in bowls with tortilla chips.  Garnish with olives, sour cream and shredded cheese.

Hamburger Corn Bake

Ingredients:

8 oz. noodles
1 lb. ground beef
1/4 c. onion
1 can cream of mushroom soup
1 can corn
1 c. sour cream
3/4 tsp. salt

Directions:
Cook noodles according to package, drain. 

In a large skillet, cook ground beef and onion until brown. 

Stir soup, sour cream and undrained corn into large pot.  Add noodles and meat.  Heat through and enjoy!

One Pot Lasagna Soup

Ingredients:

1 lb. lean ground beef or half ground Italian sausage
1 yellow onion, diced
4-5 garlic cloves, minced
1/4 - 1/2 tsp. red pepper flakes
1- 24 oz. jar spaghetti sauce
8 c. low sodium chicken broth, divided
1 - 14 oz can crushed tomatoes
2 Tbsp tomato paste
2 tsp balsamic vinegar
1 1/2 tsp. granulated sugar
1 Tbsp dried basil
1 tsp EACH: dried parsley, dried oregano, salt
1/2 tsp pepper
1 whole bay leaf
10 uncooked lasagna noodles broken into approximately 1-2 in. pieces
1/2 c. heavy cream

Shredded mozzarella cheese
freshly finely grated Parmesan cheese
Ricotta cheese

Directions:

1. Heat large dutch oven/large soup pot over medium high heat.  Add beef and onion and cook, stirring occasionally until beef is browned.  Add garlic and red pepper flakes and saute for 30 seconds.  Drain off any excess fat.

2. Add Prego spaghetti sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices and lasagna noodles.  Bring to boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).

3. Discard bay leaf and stir in heavy cream (optional) and 2-4 cups chicken broth to reach desired consistency.  Garnish individual servings with desired amount of cheeses. 

Recipe Notes:
*I love lasagna noodles in this recipe!  You can also replace the noodles with 2 1/2 c. uncooked small shells if desired and simmer for less time.
**If you want to omit the heavy cream but still would like a thicker soup then I suggest whisking 2 tsp of cornstarch with some of the chicken broth and adding to the soup to simmer and thicken.

Peanut Butter Cup Cookies

Ingredients:

Refrigerator Cookie Dough (chocolate chip, peanut butter, sugar cookie...any dough is fine)
Miniature Reeses Peanut Butter Cups

Directions:
 
Slice the cookie dough into 1 to 1 ½ inch slices. Lay the slices on their side and cut them into quarters. Place each quarter into a greased mini-muffin tin. Peel the wrapper from as many pieces of candy as cookies you’re going to make.

Bake the cookie dough in a 350-degree oven for just a few minutes, about 6 to 8 at the most. You’ll want to take them out just when they start to turn golden.

Almost as soon as you pull the warm cookies from the oven, begin lightly pressing one piece of candy into each cookie. The warmer the cookies, the better. They’ll grab onto the pieces of candy and work their magic, making the candy nice and soft and melty.

When cooled, remove from muffin tins with a spoon.

Manti Chicken

Ingredients:

1/4 - 1/3 c. soy sauce
1 can of coke or 7-up
Chicken

Directions:

Marinade chicken for a few hours, grill.

Special "K" Bars


Bring to boil in sauce pan:
1 Tbsp. water
1 c. sugar
1 c. light corn syrup

Add and Stir until melted:
1 1/2 c. chunky peanut butter

Add and Mix well:
6 cups of Special "K" cereal

Press into a large cookie sheet (12x18x1)
Cover with a piece of waxed paper and use rolling pin to work into corners

Melt in double boiler:
12 oz. Butterscotch chips
12 oz. Chocolate chips

Pour over Special "K" bars
Spread with spatula and make design with fork

Cut with cookie cutter or make into bars using a pizza cutter.

Mini Caprese Salads

Ingredients:

Grape tomatoes
Mozzarella balls
Fresh Basil
Olive Oil
Balsamic Vinegar

Directions:

Use toothpicks to skewer the tomatoes, mozzarella and basil leaves. Arrange on a plate and drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
